Here is a really easy salmon recipe, courtesy of my mom. I made this a few weeks ago for my hubby and he said it “was the best thing [I've] ever made!” Since he says that about every meal I make, I think I need a few more opinions from y’all.
Salmon & Asparagus
Ingredients: Salmon, Asparagus, Pesto, Olive Oil, Lemon Juice, Salt & Pepper
1. Preheat oven to 400°F
2. On a large piece of foil, place asparagus in the center (about 5 pieces per person). Place the salmon on top of the asparagus, skin-down.
3. Cover the salmon in pesto, then drizzle some olive oil and lemon juice, and add a little salt & pepper.
4. Enclose the foil and place on a cookie sheet. Bake for about 20 minutes, until the salmon is flaky.
*Note: I suggest cutting the salmon into servings before placing it in the oven to make sure that it gets fully cooked.
